That’s exactly why I love these quick & easy keto-friendly meatballs. They’re gluten-free, high in protein, and perfect for meal prep. Make a batch on the weekend, and you’ll have a hearty, nourishing meal ready to go whenever you need it.

Here's the recipe.
Ingredients
For the meatballs:
500g beef or protein of choice
2 small onions, finely chopped
2 garlic cloves, minced
1 egg
¼ cup almond flour
2 tbsp fresh parsley, chopped
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
2 tbsp olive oil (for frying)
For the tomato passata:
1 jar tomato passata
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
Fresh basil (optional)
To Serve:
Grated parmesan (optional)
A fresh green salad, with lots of goodies like apple, nuts, feta cheese, red onion. Or some steamed broccoli.
You can also have some gluten free pasta, I like the red lentil pasta, however, don't make this the main part of the meal, enjoy your beautiful greens or veg first and then have a little pasta with lots of meatballs.
Instructions
1. In a large mixing bowl, combine the ground meat, onion, garlic, egg, almond flour, parsley, oregano, salt, and pepper. Mix well.
2. Form into small meatballs, about the size of a golf ball.
3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides (about 6-8 minutes). You may need to do this in batches. Remove from the pan and set aside.
For the Tomato Passata:
4. In the same skillet, add more olive oil if needed. Sauté the onion until soft and translucent (about 5 minutes).
5. Add the garlic and cook for another 1-2 minutes, until fragrant.
6. Pour in the tomato passata and add basil, oregano, salt, and pepper. Stir well and let simmer for 10-15 minutes.
Combining:
7. Return the meatballs to the skillet and let them simmer in the sauce for 10-15 minutes. They’ll absorb all that delicious flavour!
