I am such a big fan of having healthy treats on hand. They are the perfect way to round off a beautiful lunch or dinner or when you just want 'something' 🤔
However, a lot of cakes, biscuits and sweet things, aside from containing large amounts of sugar, also contain gluten, something that I try to avoid as much as possible. I honestly believe that if we all stopped eating gluten we would be healthier and importantly happier 😁
And here's the reason why. The wheat is very different these days, as it has been crossbred. It’s been shortened and the stem made thicker so that it doesn't fall over as easily which ultimately means it's been hybridized. This means we are no longer eating the wheat like we did in the good old days and there the problem lies 😌
Gluten is found primarily in grains like wheat, barley, and rye, and in many foods made from these grains. Here's a breakdown of common gluten-containing foods: wheat breads, barley, rye, breads, pasta, cakes, biscuits, muffins, pies, and pastries, cereals, pizzas, beer, gravy and sauces, processed meats, soy sauce, stocks, couscous, oats, hot chips etc etc 🥖
Another thing that is found in wheat is Amylopectin A - similar to gluten but instead of being a protein it is a carbohydrate, which yep you guessed it, causes a really high spike in your blood sugar level. When your blood sugar level goes up really high under the effects of Amylopectin A in the hybridized wheat, very quickly your body has to do something with it so it stores it as fat.
Here’s how it goes ➡️ You eat sugar, your body releases insulin, your blood sugar levels then drop and the excess sugar gets stored around your organs like your liver, pushing your belly out. This is what they call visceral fat, i,e. fat that is stored around your organs and giving you a fat belly.
But hang on if we eliminate all of these foods that contain gluten and Amylopectin A where is the enjoyment in life? 🤔
Well I get the most enjoyment from life when I feel my absolute best 💃 and so I
use this as my number 1 motivation. However, in saying this I also love to round my lunch and dinner and sometimes even breakfast, off with something sweet and delicious ❤️
So currently I am experimenting with making all different types of delicious gluten free foods because that's what helps me to feel my very best, which is a huge value of mine.
With that being said, here’s my latest gluten free biscuit recipe and it worked a treat! 🍪

Gluten free, blueberry and macadamia biscuits 🫐
INGREDIENTS
1/4 cup (33 g) macadamia nuts, chopped
1 cup (120 g) almond flour
1/3 cup (35 g) coconut flour
2 tbsp (42 g) honey
2 large eggs, beaten
1/3 cup (80 g) almond milk
1 tbsp (14 g) ghee or butter melted
1/2 cup (74 g) blueberries
DIRECTIONS
1. Preheat oven to 325 degres F (162 degrees C).
2. Mix all ingredients together, except for blueberries, until well blended. Lightly mix in blueberries.
3. Make 8 balls with the dough and lightly press onto a tray.
4. Cook for 10-12 minutes, until lightly browned.
